Manchego
Manchego cheese originated from the region of La Mancha in the heart of Spain. This cheese comes from sheep’s milk of the Manchega breed. Manchego is categorized as a semi-hard cheese that is slightly nutty with a hint of piquancy. With age, this cheese develops a sharper flavour and consistency.
Pairing:
Our aged Manchego pairs gorgeously with a rioja or a rioja blanco, both of which hold a semi citrus note with ample acidity. There are many reds that pair well with these cheeses including, bordeaux, chianti, merlot, meritage and more. As a rule of thumb, the more aged Manchego pairs well with mature reds.
