Pecorino is a hard and slightly salty Italian cheese made from Sheep’s milk. The name of this cheese is taken from the Italian word Peccora which means “sheep”. The first bite of this cheese will give off a nutty taste that resembles a walnut and then the salty flavours kick in. This cheese does well on its own and with other accompaniments.
Pairing: Chianti, Cabernet Sauvignon.
